Something about it was more cleanly executed. I also (and I deserve being struck by lightning for saying this) prefer the Hogfather death voice to Christopher Lee.
However, as the wife pointed out, CoM came BEFORE Hogfather, so Death being less human in that one works out.
This is not to say I hated CoM. I think it was beautifully done - just the Hogfather version was better in many tiny ways.
Also, just as a tiny aside, the man who plays Rincewind also plays Albert in Hogfather.
He was also the voices of Dangermouse and Count Duckula.
